Chocolate Avocado Truffles
– 1 Cup Chocolate Chips
– 1 small avocado
– 1 tsp vanilla (optional)
In a microwave safe glass bowl, melt the chocolate chips. Heat for 30 seconds and stir. Continue until melted. (I don’t have a microwave and melted the chips in a small sauce pan on the stove).
Food process the avocado until it is super creamy. Mix with the melted chocolate until blended. Cover and store in the fridge until firm, at least a few hours.
Cover a cookie sheet with wax paper. With a teaspoon cookie scooper, form balls. Roll truffles in coconut, sprinkles or cocoa, if you prefer. Place on cookie sheet. Refridgerate until ready to serve. Yum!!
